Le gâteau aux œufs au chocolat noir et caramel salé est une recette spectaculaire que le chef pâtissier Sal De Riso a créée pour nous pour Pâques . On vous le dit tout de suite, pour le reproduire il faut beaucoup d’habileté en préparations pâtissières.
Gâteau aux œufs de Pâques de Sal De Riso
Vous devrez réaliser une crème au caramel salé et une bavaroise au chocolat et les verser dans un moule demi-œuf . Une fois ces couches refroidies, l’œuf doit être rempli de tranches de tourterelle humidifiées avec un sirop aromatisé à l’orange et à la vanille puis laissé refroidir à nouveau. Enfin, le demi-œuf est recouvert d’un glaçage au chocolat noir et décoré au choix de fleurs en sucre, de cacahuètes pralinées et de rubans de pâte à sucre colorée.

POUR LA CRÈME AU CARAMEL AU SEL
125g de crème mi-chantettée
sel
POUR LA CRÈME BAVAROISE AU CHOCOLAT NOIR
200g de chocolat noir 70%
150g de lait
30g de sucre
POUR LA BAIGNADE ET POUR COMPLÉTER
1Colombe
50g de sucre
1orangegousse de vanille
POUR LE GLAÇAGE AU CHOCOLAT
110g de sucre
75g de glucose (vous pouvez également utiliser du miel)
75g de lait concentré
65g de chocolat noir 70%
30g de gélatine comestible
25g de beurre de cacao (en vente dans les commerces et magasins spécialisés)
16g de crème fraîche
Préparation
POUR THE CRÈME AU CARAMEL AU SEL
Stage 1
Heat the crème fraîche at 40°C with a sel pincée. Melt the chocolate in bain-marie at 40°C.
Stage 2
Faire tremper la gelatine dans l’eau.
Stage 3
Emulsion the crème and the chocolate. Please use the pressed and mixed gelatine to taste.
Stage 4
Bring the mélange to 28°C.
Stage 5
Enjoy the crème mi-chantettée et les cacahuètes pralinées.
Stage 6
Tread a moule in the form of half-size (23 x 14 cm) of food film.
Stage 7
Pour the cream into the moule to stick it onto the entire surface and leave it in the freezer for 2 hours.
POUR LA CRÈME BAVAROISE AU CHOCOLAT NOIR
Stage 8
Faire tremper la gelatine dans l’eau froide. Press it and melt it in the microwave.
Stage 9
Make the milk, the crème fraîche and the sauce at 80°C.
Stage 10
Enjoy jelly fondue and chocolate noir. Emulsionner with a plongeant mixer.
Stage 11
Add the crème anglaise and good emulsionner.
Stage 12
Quickly refrigerate the crème on the plate in the glacé basin, bring the temperature to 28°C and add the semi-chanted crème to the end.
Stage 13
Pour delicately into the half-œuf moule where you have poured the caramel crème into the salted milk and leave it aside for 2 hours in the freezer.
POUR BAIGNADE AND POUR COMPLETER
Stage 14
Boil 100 g of water with the juice, the grated grains of the vanilla gousse and the chopped orange zest. Laisser refroidir.
Stage 15
Sort the half-œuf of the freezer and complete it in a batch of tranches of tourterelle, humidify them with the syrup and put them back in the freezer for another 1 hour.
POUR THE GLAÇAGE AU CHOCOLAT
Stage 16
Faire tremper la gelatine dans l’eau froide.
Stage 17
Mix the juices with the cream, concentrated milk and glucose.
Stage 18
Cook at 103°C, remove the feu and add the pressed gelatine: stop just dissolving.
Stage 19
Bring the temperature to 50°C and add the dark chocolate and the cocoa drink. Blend for 2 minutes, then filter.
Stage 20
Use the glazing at an ambient temperature of 30°C.
Stage 21
Sort out the half-œuf of the freezer, remove it from the grill with a shelf underneath and collect the glazing from the chocolate.
Stage 22
Decorate your envies with some sugar flowers, some pralinée cacahuètes and some freshly colored pâte rubs.
